Why it exists.
The beginning
Marine Ipert composed Strawberry Rhubarb Caviar in 2018, placing it within Brocard's Café Gourmand collection. The name alone signals intent, not a dessert, but something more considered. Caviar, in this context, is a culinary reference to texture and refinement, not abundance. The pairing of strawberry and rhubarb carries natural tension: sweet against tart, soft against sharp. Ipert built around that opposition rather than smoothing it into something safe.
The note structure is unusual in how deliberately it refuses to resolve. Most fruity fragrances lean toward sweetness; here, rhubarb's vegetal tartness keeps everything in check. The green notes, apple, lime, lemon, amplify this tension in the opening, creating a burst that reads more herbal than sweet. Melon and freesia add watery freshness in the heart, while jasmine brings a quiet floral weight. The result is a scent that smells like a farmer's market at sunrise rather than a pastry shop at noon.
The evolution
The opening announces itself with a sharp citrus-green burst, lime and lemon hit first, followed immediately by green apple. There's an herbal quality to the top notes that feels almost tart, like biting into a stem. Strawberry arrives within minutes, but it doesn't overwhelm; rhubarb keeps it honest, adding a pleasant sharpness that prevents the composition from sliding into sweetness. The heart phase is where this fragrance earns its name, strawberry becomes jammy and dense, rhubarb maintains its presence, and the melon-freesia combination adds a dewy, ozonic freshness that feels like morning air over a garden. Cedar and musk arrive in the drydown to anchor everything, providing warmth without heaviness. The musk stays clean, almost skin-like. The cedar is quiet but present, lending structure to what might otherwise float away. Four to six hours on most skin, closer to skin than room, intimate in the best sense.
Cultural impact
Brocard occupies an interesting space, historic Russian craft with a contemporary sensibility. The 2018 Café Gourmand collection explored food-inspired fragrance with restraint rather than excess.
