Why it exists.
The beginning
9:00 PM by HOC is the closing chapter of a three-part olfactive story set across a single day in London. Conceived by ultra-niche house HOC Parfum as part of their 24H London trilogy, it was composed in 2019 by Vincent Schaller, a Swiss-born, Firmenich-trained perfumer and Doctor in Chemistry who has built more than 300 compositions for houses including Lalique, Le Labo, Paul Smith, and Courrèges. Having lived in London himself, Schaller chose the city as his own Histoire Olfactive, distilling its late-evening character into this final installment.
What makes this composition earn its place as the trilogy's closer is its refusal to settle. 9:00 PM doesn't retreat into easy comfort. Juniper and pimento open with almost cocktail-sharp clarity. Then Cuban tobacco and frankincense take the wheel, driving toward a sandalwood-and-tonka finish that stays dry rather than syrupy. The rum is present, but it reads as memory of a drink, not the drink itself. The composition moves through its stages with the patience of a long evening: bright and bracing at first, then dense and resinous, then quietly woody as the hours pass.
The evolution
The opening arrives sharp and almost disorienting. Pink pepper and gin cut through with a bracing clarity, with pimento adding its own peppery lift that feels more cocktail bar than perfume. A bright citrus flicker registers at the edges, gone quickly. Then the spice begins to warm, and the composition finds its center of gravity. Cuban tobacco and leather take over, wrapped in coriander's green-cool haze. Frankincense climbs, vertical and resinous, like church smoke caught in a draft. This is where the fragrance lives for most of its life, the amberwood beneath giving it weight without sweetness. As the composition settles deeper, the tobacco softens. Bourbon vanilla emerges, not as dessert but as the wood-warmth of a whisky cask. Sandalwood takes over the structural work, and tonka bean adds a bittersweet edge that keeps the whole thing from going soft.

Within HOC's own world, 9:00 PM holds the position of finale. It closes the 24H London trilogy, and it carries the weight of being the chapter that has to land last. The composition draws on tobacco, leather, amberwood, and frankincense as its structural pillars, but it never reads as a straightforward member of that family. The rum note gives it a distinctive warmth, the juniper keeps it sharp through the opening, and the tonka-sandalwood base keeps the drydown dry rather than dessert-sweet.
