The beginning
The first chapter in HOC Parfum's 24-hour London trilogy, 11:00 AM is a portrait of the city in its most unhurried light. HOC, short for Histoire Olfactive Collective, released it in 2019 alongside 5:00 PM and 9:00 PM, building a single day in three acts. The nose behind the trilogy is Vincent Schaller, a Swiss-born, Firmenich-trained perfumer and Doctor in Chemistry who has composed over 300 fragrances for houses including Lalique, Le Labo, Paul Smith and Courrège. Having lived in London himself, Schaller chose the city as his own Histoire Olfactive, distilling its late-morning character into this opening installment.
What makes 11:00 AM distinctive is its pairing of Bulgarian rose with raspberry and coffee, a gourmand floral that reads as breakfast in a garden rather than a perfume counter. The rose gets stacked, May rose, Bulgarian rose, and Centifolia layered together, then pushed against patchouli and vanilla for depth. Cashmere wood softens the base into something plush and slightly resinous, the kind of accord that turns what could have been a sharp floral into something you want to lean into.
The evolution
The opening is the loudest part. Raspberry and coffee hit together, bright and a little bitter, like brewed coffee poured over ripe fruit. Then the Bulgarian rose arrives with jasmine underneath, and the sweetness rounds out, warm rather than syrupy. As the top notes fade, what remains is rose sitting on a bed of cashmere wood, patchouli, and a quiet vanilla that never turns candy-like. The musk gradually takes over, pulling everything close to the skin with a soft, skin-warm quality that feels more intimate than projected. Over the course of a full day's wear, the sillage draws inward, leaving a soft floral-woody trace on the wrist that lingers well into the next morning like the memory of a late breakfast that ran long. The drydown reveals more of the cashmere wood's velvety texture, and the vanilla takes on a faint creaminess that sits just above the musk.
