The story begins with Irish monks who brought perfume distilling techniques back to Ireland around 1000 AD, establishing a centuries-old tradition of spirit craft. In 1971, a development team led by Tom Jago at Gilbeys of Ireland set out to create something new: a cream liqueur that could hold its emulsion at room temperature. The concept drew on Ireland's dual strengths, pairing the country's dairy expertise with its celebrated whiskey heritage. Diageo acquired the brand as part of its portfolio expansion and expanded production significantly. First introduced commercially in 1974 in Dublin, Baileys became the world's leading liqueur brand, with over 80 million litres sold annually across 150 markets. The success of Baileys sparked an entire liqueur category, inspiring producers worldwide to develop cream-based and dairy-blend spirits.
