Composed by Florian Gallo and released in 2021, it translates that specific stretch of time into scent: the romance of a silent night in the woods, where whispers of love travel through the crackling bonfire. The house treats fragrance as a diary of the day, and 9pm reads like the entry for the hour when daylight fully gives up. There's a hush to the whole thing, the kind of stillness that settles in once the sun has gone and you're left with embers, shadows, and whatever's left to say.
What makes 9pm unusual is how it balances two materials that don't usually share the same page: clove, which reads sharp and medicinal, and marshmallow, which goes pillowy and confectionary. Florian Gallo threads them through cade oil and chestnut at the center, a smoky, almost tarry heart that keeps the sweetness honest. The pink pepper on top adds a dry flicker of heat without tipping the composition off balance, holding the line between a spiced treat and something more architectural.
The evolution
