The Story
Why it exists.
The beginning
Alessandro Olmo built Fennel Absolute for Spezieria di San Marco around a single ingredient most perfumers treat as background: roasted fennel, drawn from Roasted Indian fennel absolute CO2 Orpur®, intense enough to anchor an entire composition. Launched in 2026, it sits within a house whose work centers on the patient handling of herbs, spices and citrus, ingredients that reward careful sourcing and slow maceration. Olmo's composition treats fennel not as ornament but as architecture. The roasted seed becomes the spine, with citrus and cinnamon bracing the opening and a warm, resinous base carrying the hours after. There is no attempt to soften the fennel into something crowd-pleasing or to bury it under sweetness. It leads, and the rest of the formula agrees to follow.
What makes this composition worth studying is the placement of roasted fennel in the heart, not the base. The roasted Indian fennel absolute sits between Haitian vetiver and Indonesian patchouli, two roots that amplify fennel's drier, woodier side. The cinnamon leaf in the opening foreshadows the spice, and the benzoin and tonka in the base give the fennel somewhere warm to land once the citrus has moved on.
The evolution
The opening belongs to citrus: Calabrian bergamot sharp, yellow mandarin sweet, then cinnamon leaf threading between them like a wire pulled taut. The fennel arrives not long after, roasted and savory, pushing the citrus aside without erasing it. What surprises is the vetiver. It doesn't read grassy here. It reads dry, smoky, almost leathery, and it holds that register longer than expected. Patchouli deepens it further, adding a dark earthiness that grounds the spice without competing with it. The drydown is where the composition settles into its final shape: tonka bean's almond warmth, benzoin's resinous hum, and Ambrofix™ creating a skin-like glow that lasts. On fabric the next morning, the fennel and tonka are still legible, quieter, but unmistakably there, proof that the careful architecture of the formula holds up well past the first hours of wear.
Cultural impact
Fennel Absolute sits within Spezieria di San Marco's growing catalog of citrus and aromatic compositions, alongside Caviar Lime and Velvet Neroli. It introduces roasted fennel as a lead ingredient, a botanical rarely given center stage, and the result is a fragrance that feels distinct from the usual citrus-and-amber offerings in the line. The spicier, warmer profile adds variety without straying from the house's commitment to clear, ingredient-forward composition. In a market crowded with fennel appearing only as a fleeting accent, Fennel Absolute commits fully to the seed's roasted, anise-laced character.
