The beginning
Paris Elysees conceived Night Caviar in 2021 as part of the house's exploration of nocturnal fragrance narratives. Born in a modest Champs-Élysées workshop, the house has built its reputation on limited-edition scents that capture fleeting moments, and Night Caviar was designed to echo the intrigue of late-night gatherings. The perfumer behind this creation worked with the brief of making herbs feel inviting rather than foreign, using absinthe and fennel as central characters rather than accent notes. The brand's commitment to experimental blends positioned these challenging materials as the foundation rather than afterthought, resulting in a fragrance that demands attention from its first spray.
The note selection in Night Caviar reflects a deliberate philosophy about contrast. Absinthe and fennel were chosen not for novelty but for their shared green, anisic quality, which creates immediate recognition despite their individual sharpness. Star anise functions as a connective thread, its cooler spice bridging the more aggressive herbs with the eventual floral heart. When lavender arrives, its role is deliberately supportive rather than dominant, chosen to soften rather than replace the opening. The black vanilla husk in the base completes the logic: where most fragrances use vanilla for sweetness, here the husk provides nutty warmth without sugar, allowing musk to finish without competition.
The evolution
Night Caviar evolves through three distinct acts that mirror the progression of an evening. The opening act hinges on absinthe, fennel and star anise, a bold combination that announces itself confidently and refuses to be polite about it. These three ingredients share an anisic thread that unites them despite their individual complexities: absinthe brings alcoholic herbalism, fennel lends a sweeter medicinal quality, and star anise contributes cool spice. As the fragrance transitions into its heart phase, lavender emerges to perform the crucial role of mediator. The floral calm does not overpower the herbs but rather smooths their edges, creating a bridge between the sharp opening and the warmer base. By the time the drydown arrives, the herbs have receded entirely, leaving black vanilla husk and musk to complete the narrative. The husk adds a dark, slightly bitter warmth that lingers close to skin, while musk provides an animalic finish that feels Intimate rather than broadcast.

Night Caviar has sparked conversation among enthusiasts for its bold herbal opening, often compared to 212 VIP Black and the house’s own Black Caviar for Men.
