    Californian lemon essence is produced exclusively through cold expression, a mechanical extraction method that dates to the early 20th century. No heat or solvents touch the material, preserving volatile aroma compounds exactly as they exist in the living fruit. The resulting essence is a pale yellow liquid with an intensely bright, clean citrus profile.
