The evolution

The banana opens bright and unapologetic, a green banana at first, then riper, juicier, the banana leaf adding a green mineral edge that keeps it from going full dessert. Within minutes the milk arrives, rounding the fruit into something smoother, peach joining the lactonic swell. The first hour is pure tropical cream, banana milkshake, almost.
