    How Wild Strawberry Is Made

    Strawberry poses a distinct challenge for perfumers: the fruit is roughly 90 percent water, making it unsuitable for steam distillation or traditional solvent extraction. Because direct extraction yields almost nothing, perfumers recreate wild strawberry aroma through aroma chemistry, precisely mapping the fruit's hundreds of volatile organic compounds identified through more than 80 years of research. Scientists have also explored fermentation using the fungus Wolfiporia cocos cultivated on blackcurrant pomace, producing a naturally derived alternative that mirrors the wild strawberry scent profile.
