    Tonka beans are harvested from wild Dipteryx odorata trees in the Amazon basin. Communities collect the naturally fallen fruits during the dry season, cracking the hard pods with stone tools to extract the precious beans within. The seeds are then carefully shade-dried and cured through controlled fermentation, a process that allows natural coumarin crystals to form on the surface and deepens the aromatic complexity.

    Modern extraction primarily uses supercritical CO₂ at IFF's facility in Aubrac, France. This method operates at low temperatures, protecting sensitive molecules while producing an extract with -34% lower cradle-to-gate carbon footprint than traditional solvent extraction. The result captures tonka's full complexity: coumarin dominates at 60-90% of composition, complemented by vanillin, benzaldehyde, and cinnamic acid derivatives. The final absolute is thick and richly warm, requiring only trace amounts to deliver its characteristic creamy, roasted depth.
