While fruits have adorned perfumers' palettes for centuries, they presented early extractors with stubborn challenges. Ancient perfumers favored resilient materials like resins, spices, and rose petals, while delicate fruits remained largely absent from historical fragrance formulas. The development of modern perfumery chemistry in the late nineteenth century finally opened possibilities for fruity notes. Haarmann & Reimer's foundational work in synthetic aromatic compounds, combined with the extraction innovations of houses like Antoine Chiris in Grasse during the 1890s, established the technical groundwork. However, raspberry notes only became reliable ingredients after advances in organic synthesis allowed chemists to identify and recreate the specific molecules responsible for the fruit's characteristic aroma.
