    Production

    How Mezcal Is Made

    Mezcal begins in the highlands of Oaxaca, where mature agave plants are harvested after 7 to 12 years. Workers slice the piñas, the heart of the plant, and lay them in earthen pits lined with stones. The pits are covered with earth and set alight, allowing the piñas to roast for three to five days. This slow fire imparts the characteristic smoky aroma. After cooling, the roasted piñas are crushed, traditionally by a stone wheel called a tahona, to extract sugary juice. The juice ferments in open wooden vats, where natural yeasts convert sugars into alcohol over 7 to 14 days. The fermented mash is then distilled in copper pot stills, a process that captures volatile compounds while preserving the smoky, earthy essence. Some producers age the distilled spirit in oak barrels, adding subtle vanilla and tannin nuances. For perfumery, the clear mezcal spirit undergoes steam distillation, separating aromatic water that contains the volatile oils. The resulting mezcal absolute is a thick, amber liquid rich in phenols, terpenes, and smoky aldehydes, ready for blending into fragrance formulas.
